Grilling Chicken Cutlets

So, to make the dollar stretch and help portion control, I usually slice chicken breast in half into cutlets. Pan frying and electric skillet frying comes out fine but grilling is tricky. I grill whole breast just fine.

 

Any advice? I usually cook on medium direct heat (about 450-500 on the hood thermometer) 3-4minutes a side but it always come out too dry and mildly chewy. Do I need to be doing lower temps? How long per side at said temp?

You need to cook hotter and shorter time

I grill up parts at 400 degrees indirect. To control portions and cook the parts at the same rate, I cut the breasts in half sideways to make them thigh-sized.

 

For cutlets like you describe, I'd brine them and cook them hot and fast.

Brine them, never thought to do that. Know of the practice, just never done it. Thanks!
