Yeah, six pounds isn't a lot for a croud, but for two...? I often smoke two Boston Butts at a time even though there is only me (alpha-gal is a bitch!). I freeze most in single meal size with leftovers packs. Hasn't seemed to hurt the port at all (I usually don't add much NC BBQ sauce until preparing for a meal) and smells wonderful when I open the outer pack from the freezer. (Small baggies inside, large freezer bag outside.)
I do the same now when I fix a brisket except when the whole family is over. At those times, I'm lucky to have any leftovers! Also have been experimenting with chuck roasts instead of brisket. Pretty good, but I don't find the beef flavor to be as intense.
