2.5" Bone-in Ribeye Steaks

The other day I picked up the first 2 bones of a prime rib... I split that sucker into 2 (about 2.7 lbs per steak with bone)

 

Here are the shots --- man I wish I was eating this right now again...

 

We made some caramelized onions, fresh tomato, basil and mozzarella salad, and some broccoli rabe (with garlic and oil)

 

After cooking the steaks were about 2"

 

And yes We ate them ALL!!!

Now that's just plain unfair, CPA_ESQ! I was looking forward to the 1 1/2" ribeye and you have to go throw in a whole new level! I'm SO-O-O hungry...

Oh man.. what a nice blast from the past.

 

I have about 20 lbs of rib roasts aging now, and can't wait to slice those suckers up and make this again.. Thanks for all the nice comments :)

CPA - AWESOME! My kind of steak! Thanks so much for the tease - the photos were remarkable! Perfect sides to compliment a pair of the best steaks I've seen in a bit. My hat's off to you my friend!
