Beef Fatty?

Is it possible to make a Beef version of the Fatty? If so, anyone got a recipe, tips, etc? I figure it should be possible, but wanting to know before I attempt.

Use your favorite meatloaf wrapped around a sausage... Meatloaf is only cooked on the smoker in our house for the last couple years

Sure is are you going to grind the meat or use ground round? sirloin?

Last time I made one I stuffed it with Velveeta Mac&Cheese

 

This guy made one with corned beef hash........
