BBQ Cabbage

Has anyone else tried, or have suggestions for, BBQ Cabbage?

Yes, I know it either looks like an Alien Pod or Audrey II from Little Shop of Horrors...but it was edible!

Here is the final shot:

I pulled it out of one of Raichlen's books. Although good, it was for from perfect. It needed a much longer cook. The stuffing is chorizo, garlic and onion...that part was great. The cabbage just needed a little bit more time. Does anyone else have any good BBQ cabbage recipes?

Mike ...

It's very simple, but we like it.

Quarter a head of cabbage
Spray with Olive Oil Pam Spray
Season with salt and pepper
Grill with direct heat for grill marks
Finish with indirect heat [until cabbage is fairly tender with toothpick]
Serve with a sprinkle of malt vinegar and salt .. or butter, salt and pepper

I've certainly never grilled cabbage before, but I now realize I should have been! Mike - your photos are awesome whether the head was cooked well or not! And Billy Goat, I've copied your recipe into my book, and will try it the next ham I cook on the grill! Or kielbasi, as I think cabbage would be a wonderful side dish to accompany the sausage!

Okay, perhaps off the subject, but on topic (strange dishes?), I've heard of mexican fried ice cream, even seen it on menus while dining in a Mexican cuisine. Exactly how do you "fry" ice cream? Or is this just a name for other than frying in the traditional sense of the word?

Have fun at my expense now, but this is a genuine question from me! :)

ok from what I can recall the ice cream is not acutally fried, but rolled around in a fried type of breading. smash up some corn flakes and than take a scoop of ice cream and roll it around in the flakes. add some caramel and there ya go.

mind you thats probably the furtherest from the truth, but that kinda gives you an idea of it.

Yes - there is a fried ice cream, I have never heard of the Mexican type that was described, but in several Asian resturants, Vietnamese, Japanese, Thai, (but not Chinese), etc. , fried ice cream is served. The Ice Cream is breaded in a heavy dough like a stiff pancake mixture. It is dropped into a deep fryer. When served the dessert is hot on the outside and still frozen on the inside. Alsolutely delicous, and a strange sensation of taste, and mixture of senses, with the hot and cold affect with each bite. :P

BG - Thanks for the recipe idea. I like that...and just happen to have a half head of cabbage sitting around!

The other morning, I found another BBQ Cabbage variant that used bacon instead of chorizo. Next weekend I will take another hack at it!
