I cut a top sirlion steak in half, left them on the counter for about 45mins and grilled them on the ultra sear (US). One with with the top open and one with it closed. I did blind taste test with my wife, a friend and myself. We tried unseasoned, salt and pepper only and with regular a1 sauce. In every instance the lid open won. It def had more "char" flavor.
Open is the only way to go! Chars the outside before the inside begins to overcook and dry out, which will happen with the lid closed, more like baking or broiling. My two cents. And I'm making pizza tonight, but you've got my taste buds longing for a steak now! Hmmmmmm, steak & potatoes, steak & eggs, now steak & pizza!
