Full Version: Open lid IR vs closed lid IR taste test results.

I cut a top sirlion steak in half, left them on the counter for about 45mins and grilled them on the ultra sear (US). One with with the top open and one with it closed. I did blind taste test with my wife, a friend and myself. We tried unseasoned, salt and pepper only and with regular a1 sauce. In every instance the lid open won. It def had more "char" flavor.

Open is the only way to go! Chars the outside before the inside begins to overcook and dry out, which will happen with the lid closed, more like baking or broiling. My two cents. And I'm making pizza tonight, but you've got my taste buds longing for a steak now! Hmmmmmm, steak & potatoes, steak & eggs, now steak & pizza! laugh.gif

When I used to have a particularly tough day, it would be a P food only day--pasta, popcorn, pizza, potatoes and pice cream.

Well.............. Just the pizza. But......... I burnt the crust! Dang it! Preheated with the burners on, forgot to turn them off, put the pizza on, and wondered why two minutes later I was getting a burnt smell! sad.gif Can I use the word aghast? My wifes reaction to a charred crust! So, a dismal meal, luckily I was able to salvage it with some delicious apple pie - don't tell Shelly. wink.gif

Hi everyone,

I've been curious about this since I just bought a weber and it says to close down the lid in order to get the "smokey bbq" flavour in the steaks. I have not setup the bbq yet, but I will definitely give the test a try.

Although I am just wondering if you are minimizing the other variables such as temperature of the steak? I'm guessing with the closed lid method you cannot cook the steaks the same amount of time as open lid. Another variable may be how is it possible to allow the steaks to rest for equal periods of time if you are eating them both at the same time since I'm assuming you are cooking using one method then once complete using the other method.

Thanks for sharing though, I'll post back once I give it a try.
