I will be doing 2 racks of beef back ribs (7.5 lb) in the MES.
What is the best way, should they be foiled (3-2-1 method)?
looks like the racks will fit on 2 shelves or would it be better to split them up between all 4 shelves?
About how long at 225 deg should these take, and what is the best wood for beef?
