My neighbor came back with a couple deer, and I now have a heck of a lot of meat. I really want to try my own venison jerky!

I have a few questions:

1. Any good venison jerky recipes? There's about a million on Google and I don't know where to start. I would like to have cured jerky that does not have to be refrigerated when done.

2. What cut of meat should I use?

3. I've noticed people hanging the jerky in the smoker versus laying them flat on the grate. Any advantage/disadvantage either way?

I will be smoking in my vertical smoker, so I have plenty of room to hang the strips.
