Full Version: Sweet and easy cornbread

Here is my favorite cornbread recipe. Sweet and very easy.

1 box Jiffy corn muffin mix
1 can cream style corn
1 egg
1 cup colby jack cheese
optional additions include, green chilis, pimentos, jalepenos, green onions, sausage... use your imagination

pour into an 8x8 baking pan and bake at 350 for 45 minutes or until set in the center. If you leave out the egg and under cook it a little, it is like a corn pudding.

I love cornbread, and will certainly give this one a try. Do you have one for corn rye bread also? This bread has become almost impossible to find around here, and it was one of my favorites!

I would think a cup of cheese would take this out of healty and put it into the bbq category. I'm sure the muffin mix has a lot of sugar in it to make it so sweet.

Rye cornbread? I have never tried that but here's an idea. Add caraway seed and see what you get. (or fennel seed) Sounds interesting. Not really sure.

I did a google search and found several recipes. Here's the first one. Hope it helps!

The corn rye around here DID contain caraway seed. How'd you know that? wink.gif Thanks for the link to the recipes.

I'm czech and our rye bread contains caraway seed. Just seems to make the rye flavor to me. Of course the rye flour is part of it too.... Just thought you could get the same kinda flavor with just the caraway. I have this knack of thinking of flavors and can taste them in my mind. weird.

Now to go get those ribs on the kamado....

Well, I'm going to give your recipe a whirl. I've never baked a rye bread before, it sounds tricky. Shelly, if you are out there - what's your advice on this corn rye, if you've had any experience with it?
