I own a Jenn-Air 461P. I plan to smoke two racks tomorrow. I will be using a smoker pouch. Should I sear the ribs first then encase in foil or just use inderect grilling throught? ph34r.gif

JUst keep 'em low/slow for the duration. BTW I don't go to extremes with baby backs. You know hours and hours at 175 to 200. I do mine about 275 to 325 until tender and they fall off the bones and are as good as any I've ever had. Kiss of smoke and sauce at the end (if you like) and they're good to go. Usually only take me about an hour or so. I"m sure there is some kind of satisfaction in going the other extreme (which I've done) but it isn't in taste or tetxture imo. NOw spares are a different story. Try the same technique and you get rubber on the bone. There you need super low and super slow but the results are mmmmmmmmmmmm gooooooood! tongue.gif

Thanks! I had them at around 275 for about an hour and a quarter and they were as tender as could be! I hit them with a rub about 24 hours prior to the grill and they developed a nice crust ( i believe due to some sugar present in the rub).
