TEX-MEX SKIRT STEAK TORTTILLAS

Rub:
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
½ teaspoon onion powder

1 lb Skirt Steak

6 Warm Flour Tortillas
Diced Tomato
Chopped Cilantro
1 Diced Onion
1 Diced Jalapeno
Grated Cheese

Marinate 1 lb. skirt steak in 3-oz Fabulosa Quick Fajitas Marinade (www.figaroco.com) for 6 hours in refrigerator. Drain for 30 minutes. Combine rub ingredients and apply to meat. Let set 30 minutes. Grill skirt steak over medium high heat until desired doneness; remove from heat; cover loosely with foil and let rest for several minutes. Slice steak into thin slices, being sure to cut across the grain. Serve with tortillas and an assortment of condiments.
