Based on the advice within the last few days - I'm trying out something new today. I've got some boneless pork loin that I've sliced into strips. Right now they are marinading in (new for me) an orange juice based marinade I concocted about a half hour ago. I did cheat (as someone offered) and started with a half bottle of Stubbs Pork Marinade. It looks to be a nice zesty start. I added two cups of Orange Juice (some pulp), two tablespoons brown sugar and a swiggleful of coarse black pepper. I've saved some to baste with at the end of my cooking session. I'm going to skewer these and cook over high heat.

I'm anxious to savor the taste of the orange. smile.gif It's really hot and humid today - and this looks to be light fare befitting the weather. wink.gif If I get the chance to run back to my shop - where I left it, sad.gif I'll grab my camera - I think these will photograph nicely.

Resting for about 3 hours, then onto the grill.

Aarghh! I had marinaded about four pounds of meat, thinking my daughter was staying for dinner with friends. Nope. She just got home from the beach and informed us she's showering and heading out to the Hampton's for a three day party with several friends. sad.gif Communication problem! wink.gif So - a lot of meat for just Patty and I.

Oh well. I'll still stick with the program - the leftovers will be fine for a few days not having to cook. Besides - predictions of mid-nineties and high humidity through Thursday. Not conducive to wanting to cook much...

Well, dinner was cooked, served and well appreciated. As we were alone, I nixed the skewer idea, and froze 3/4 of the marinading meat for another night. Though only Patty shared this dinner tonight - I'm ecstatic over the results. I had not told her anything about my experiment with the marinade. When served - I asked what she thought. She rolled back her eyes, gave me this enormous smile and said "This is heaven! My God! What did you do to give it this delicious, sweet taste? And so tender! Look - it breaks with just my fork and melts in my mouth!"

To say I was happy is an understatement! She was right - it had a mysteriously sweet taste (the orange juice), and was the definition of moist and tender!

This meal will definitely be repeated! I had no idea OJ could impart such a delectable, but intangible taste to pork. Thanks so much to whoever (I apologize for not remembering) clued me in on this recently! I'll find your post and thank you accordingly! smile.gif

It looks fantastic and you are even plating the food differently. Your macro photography is artistic and you are the man, Mr. Mikey.

Now I hope that you are squeezing fresh orange juice and adding some of the grated rind (orange zest) to the marinade.

The food and pictures look awesome, I could almost taste it. When are you going to change your shop into Mike's Bistro, you say your near the Jersey Shore and people got to eat. excellent work Mike. Kid
