Full Version: looking for a fish to stuff and grill

Since it looks like I will be housebound due to snow for the next few days I thought I would get a nice piece of fish to stuff and grill.
I dont want salmon and Im thinking about Flounder.
I went to the market and a guy tried to sell me some Talipea and I told him that I have been fishing well over 45 years and there is no such fish.
You never hear people saying , I was fishing off the coast or in the bay and guess what I caught? a string of talipea laugh.gif
I guess I have to go down to the docks and see what everybody is bringing in today.

Tilapia is farm raised and is usually sold as fillets. I have never seen a whole tilapia fish for sale in our local markets but every one of them carries the fillets.

It has little flavor of it's own but holds up to grilling as it will not flake apart too easily.

I rarely use it as I prefer a red snapper or rock cod.

Of course, stuffing a filleted piece of fish is different from stuffing a whole fish. Tilapia (but I prefer sole for this) lends itself to being stuffed by laying the fillet top side down, spreading the stuffing of the fish and then rolling it up. I usually stuff fish fillets in this manner and it cooks quickly with some wine and lemon slices added for flavor. But not for grilling.

Didn't you just grill some stuffed pork chops? You are on a stuffing roll right now. smile.gif

Actually tilapia is a name that has been given to disguise many types of cichlids . Nobody can tell you which cichlids.
I use to raise African Cichlids and South American Cichlids such as Dempsys and Oscars.
The African Cichlids have far more color.

The reason you only see fillet's is because you need so many to make a meal.

I purchase and enjoy tilapia weekly. My Costco sells the filets, and they are delicious. A mild tasting white fish. Filets run 1/4-3/4 pound each. Two is more than enough for one person - my Patty only eats one. Do you have a Costco near your?

makes for some tasty fish and chips.................youll need some guiness for the batter though

I live at Costco.
I wanted fresh fish that I could stuff.
I did find some Flounder aka Fluke , but they wanted a kidney for it and I need both of mine smile.gif
Most of the inland waterways are frozen so the pickens were real slim

Hmmm. My Costco has the tilapia filets fresh in the meat counters. Right next to the flounder (we don't have any summer flounder (fluke) at our store). Plenty of catfish also. And of course - always salmon.

I'm thinkin:
1 (6-pound) snapper
2 pounds lump crabmeat or shrimp
1/2 cup minced green pepper
1/2 cup minced pimiento
1 cup minced scallion
1 cup minced celery
2 Tablespoons (1/4 stick) unsalted butter, melted
1 Tablespoon Worcestershire sauce
1 teaspoon lemon thyme
1 teaspoon (or two) Tabasco
A splash of heavy cream
1 Egg
Fresh bread crumbs

Stuff it till it's bursting at the seems and button it up throw it on the grill and baste it with 1/3 cup dry white wine mixed with 1/3 cup melted butter until golden brown and crusted

And serve it with grilled mixed vegi's

Ronald - here's my Costco offering (courtesy of 5 mgpixel Droid) of fresh Tilapia filets, with a very decent per/lb price. Also some of their winter flounder (as opposed to fluke, which is summer flounder and much, much larger) for better than $8 per/lb, but good taste! smile.gif

Patty just called me (I'm working at the shop) - she's making flounder tonight. Wanted to know how I wanted mine, battered fried or stuffed baked.

I'm on the way to the liquor store right now.... smile.gif

Then I'm going home to tell my battered wife how I want my filet... smile.gif

Im a little mad with myself.
This is the first winter I have run out of fish.
I usually take my catch and freeze it in the water I caught it in and put it in my outdoor fish freezer.
Good fish is scarce during the winter .
I may goto Costco tomorrow to check out the flounder

Geez, I'm still at work waiting on some lacquer to flash dry - one more coat before I can leave (@10 minutes from now). Meanwhile - Patty called 1/2 hour ago to say the filets went into the oven.. sad.gif

Nothing worse than cold baked flounder! And nuking it sucks.. sad.gif Oh well - it is what it is..

Thats when I stop at Burger King on the way home suck down a few Whopper Juniors and enjoy a small piece of my nuked fish fillet wink.gif

Actually - I've never tried to nuke it - never had any leftovers before. But I surmised that it would suck..

But all turned out well. Patty held off baking until I got home. What a girl! wub.gif wub.gif wub.gif

It was delicious! Held me on a long train ride up to NYC to pick up my F150 as my daughter just got back from another ski trip to Vermont. 2-1/2 hour train ride, 25 minute taxi cross and uptown, then 1-1/2 hours back home with the truck. Yea. I love her as much as I do Patty! wub.gif wub.gif wub.gif

But I don't want her to have to come all the way down here after her 5 hour drive back from VT and then train ride herself back in the wee hours of the morning. Better that Dad does this.

I feel your pain Us Dad's need a better union.
Now is this the same daughter that just came back from the islands ?
I cant imagine anyone here for both of the blizzards wanting to go out in the snow
